If you are using the debian package of squirrelmail, It asks you which version of Apache you are using IIRC. if it didnt, perhaps you can run dpkg-reconfigure --priority=low squirrelmail. or even try the debian package, then if you want some new version, at least you have a decent framework.
the debian package also includes /etc/squirrelmail/apache.conf which has a sample virtual host in there.
