To the best of my knowledge (and I'd enjoy being corrected), you can't.
The only way to get 5.1 channel output from the SPDIF/IEC958 output is
to use a compressed codec, ie AC3 or DTS, which have
actively-defended-patented encoders. 

Basically that means it's only good for streaming the content straight
off a DVD to a decoder box, or decoding speakers.

I believe the best you can manage in raw PCM is a 4 channel output at
48khz.
