I've had no trouble with ubuntu. I just do the server install, install ssh, then things just work. My only beef with ubuntu right now is that the 7.x Xen support is actually broken compared to debian etch, and has been since sep 2007. For some reason hwclock on debian hangs hard when running under ubuntu, but the debian shipped version doesn't seem to have this issue.
