it was some time ago but in brief... download ubuntu server iso (server installation is text based plu you can always upgrade with one apt command later). Map it as a cd rom drive for the virtual machine.
Now boot the virtual machine. This should boot from the cd and launch the installer. At this point you'll see an ubuntu logo. You need to check the help here, but basically you can give a command to set the screen size from here before you launch the installation wizard. After this its pretty much the standard installation process.
