Indeed.
But I guess the answer is simple, it's too transparent for them,
and lacks the self glorifying factor (look mama I'm using IPV6!).

In other words, using AAAA records would "just work" transparently
for any user using IPv6 or not (which is exactly your point of course)
but without
anybody noticing that they were indeed connecting to google using IPv6
(maybe they should put a little logo if you did connect in IPv6, to keep
transparency
but yet have the self glorifying factor).
