Doing

clush  -w $SLURM_JOB_NODELIST "touch file$(hostname)"

will expand $(hostname) on the host where you run clush as the double
quotes do not stop the local shell from expanding. Try single quotes
instead, like

clush  -w $SLURM_JOB_NODELIST 'touch file$(hostname)'
