Except that /opt/custom/smf comes from the zones pool, which in this
model cannot be accessed without iSCSI.

The (also unsupported) 2-pool model, in which "zones" is local and some
other ("zones2", perhaps) pool comes from iSCSI and gets used by all the
instances, would allow for the simpler /opt/custom/smf approach.  But it
would require both local storage and whatever hacking/customisations are
required to use 2 pools in general.  vmadm has historically had some
support for multiple pools but the rest of the tooling in general does
not.  And of course it does not allow for diskless servers.
