You're in a hardware virtualized environment. Hardware virtualization
virtualizes its own GPU, so the thing that you saw open up in another
window when you were running on GNU/Linux is identical to what you'd see
in the VNC console, regardless of whether you've started X11 or any
other window manager or not. Think of VNC as seeing your video adapter,
regardless of whether it's in text mode or not.

I've never used Chromium OS, nor do I really understand what you want to
achieve at the end of the day, so I don't have any way to advise you. Go
ahead and try things out and play around.
