I think this feature was added in Leopard - this is from Mail's Help file:

You can specify email addresses that you prefer to use when addressing 
messages; these are often referred to as “safe” addresses. If you address a 
message to a recipient whose address is not on your “safe” list, the 
recipient’s email address appears in red to alert you to double-check it before 
sending the message. Similarly, if the address of the account you’re using to 
send the message isn’t on the list, it appears in red.

To specify safe addresses:

        • Choose Mail > Preferences and click Composing.

        • Select the “Mark addresses not ending with” checkbox, and then enter 
one or more safe addresses, separated by commas.

If you want to enter just a domain (the part of the address that comes after 
the �...@” sign, such as “apple.com”) be sure to include the �...@” for 
increased security.


Marking safe addresses is especially useful if you have set Mail to 
automatically complete addresses as you type and you inadvertently select the 
wrong address from the list of matching addresses.
