It is still possible to combine PDF documents in Lion Preview, I did it
yesterday. Although the exact procedure has slightly changed.

Open one document in Preview ­ make sure the sidebar is visible (Thumbnails
view)

Drag the icon of the PDF file you wish to add into the Thumbnails view ­ the
trick is to be very careful where you drag & drop it, you can place it in
the middle of the existing open PDF or on the end ­ e.g. if you want it on
the end be sure to drop it ABOVE the dotted line that will appear at the end
of the existing pages before you release it, then save as. Otherwise it will
just open the second PDF without combining the two.

Another 'problem' (at least until I have found the answer) is that whereas
on my iMac running 10.6.8.1 I can combine 2 pdfs and then Save as a new
document, that doesn't so far seem to work in Lion.
Have a Genius Bar app tomorrow and will hopefully get an answer then (and
will ask about your problem Tony if no answer has been forthcoming in the
meantime).
