hi Jason The backup doesn't actually include the apps, only the app data. Have you set iTunes to sync apps with the original iPad? You can also right click the iPad in the sidebar (view menu > show sidebar in the new version of iTunes) and select 'transfer purchases from ipad', that'll get your apps transferred to the Mac. You then need to set the new iPad to sync your apps and they should all be installed.
