It should be sufficient to find a Numbers document in the Finder, select File 
>Get Info (or right click) and from the Open with: popup, choose the old 
version of Numbers. Then, select the Change All ... button below and answer 
Continue.

That *should* do the job but some people have had their Macs still using the 
later version of Numbers after doing that. That may have been addressed in OS X 
10.9.1 if it was an issue.
