With the new 'desktop' keyword, you should be able to add a separate desktop file for each app, and if their 'Icon' key is an absolute path that points to an image file available in the prime directory, snapcraft will do the right thing and prepend ${SNAP} to it. I haven't actually tested with multiple apps in the same snap, feedback welcome!
