I find that Monocote will satisfactorily stiffen an open-bay built-up wing. I find Ultracote is more "rubbery" and is better used on flat, solid surfaces.
I built a Chrysalis wing with Ultracote and it fluttered like mad on launch! I stripped it off and replaced with Monocote and never got another flutter EVER! I just finished a DAW FW190 and covered with Ultracote for the first time! Previously I had always used packing tape. I'm very happy with the finish. I squeegeed on contact cement onto the EPP (doesn't let go as does 3M-77 in our desert heat), let it dry then ironed on the Ultracote. The covering is tight and very smooth. Let's see how long it lasts!
