What weight tubing is used for such applications?
For a molded contest type model, you can use tubing that has tension around 5 to 6 times the weight of the model, and get a bit of a zoom launch with it. I use latex rubber with 2/16" inner 7/16" outer diameter which generates about 24 to 27lb's of tension at a 300% to 350% pull.

I'd recommend the "unlimited", this is the same as I use for my Aretmis LT (shown as 1/8" inner, 5/32" wall, which translates into 2/16" inner, 7/16" outer diameters). I've used 350% pull for a couple of years with my hi-start and it doesn't hurt it.
I use 60lb test monofilament fishing line. It's a bit less tangle prone than the lighter stuff, and you have some margin with the strength in case of nicks.
If you're going to make your own high start, I recommend using metal rings at all the connection points, as the fishing line could cut into the tubing. I connect the tubing to a ring with a square knot (just push a loop of tubing through then back over the ring, then pull it tight). I connect line to a ring with a universal knot as seen here:

I get the rings from choke chain type dog collars, using a hack saw and/or pliers to remove the chain from the rings.
