The rudder in FMS is a very tricky thing.
The most realistic scale sailplanes you can get are on the EMM site.

There are to many variables to try to explain. If they are not set
properly the plane
can do strange things. The .par should match the .mqo (.x) file as
close as possible. remember weight, size, drag, angle of attack, CG,
etc. all work together.
You must consider all variables
