Yes, definitely don't want to run your battery to less than 3.0 volts per cell. That would be flirting with disaster. I read the manual and it says that you can set your LVC to option 5 which would be appropriate for the 3 cell lipo you are using. I would then set the cut-off type to hard cut-off with restart. My preference is soft cut-off because if I am doing hovering type maneuvers, I would want the ESC to give me feedback that I am just about coming to the end of my ride and I won't fall out will in a hover (ouch).
