Try Voyage Linux <http://linux.voyage.hk/>. It is a pretty simple to setup. The "current" version is based on Debian Squeeze (testing). The distro comes with a shell script that will format the CF disk, create GRUB menu to display the Linux console on the serial port. You can then install the CF on the Soekris system and boot from it.
