You can have a large number of cores, some people have multiple hundreds. Having multiple cores is preferred over having multiple JVMs since it's more efficient at sharing system resources. If you're running a 32 bit JVM, you are limited in the amount of memory you can let the JVM use, so that's a consideration, but otherwise use multiple cores in one JVM and give that JVM say, half of the physical memory on the machine and tune from there.
