I use postfix, I think general opinion is that it's a little simpler than
sendmail for a beginner (which I certainly was), plus it's had fewer
security issues that I've been able to find.

I do the same thing you want to do, but with Exchange behind it on a box
running Redhat 9.0, Postfix and Spamassassin as per this walkthrough -
http://www.advosys.ca/papers/printable/postfix-filtering.html, it's a "one
size fits everyone" solution, but it works a charm.

One other suggestion, and something that I found useful is to install
Webmin, maybe it's just me but it made learning about Postfix a lot easier
simply because it splits all the options into the relevent areas.  Whilst I
never tried Sendmail it does have a Sendmail module.
