If properly configured, Spam Assassin as called from amavisd-new will auto-learn from detected spam. AFAIK it will not auto-learn ham though (not even sure that'd be something reasonable to do it on every ham message).
amavisd-new does autolearn ham -- don't see an entry in amavisd.conf, so I guess it uses the spamassassin settings.
