Good question and the answer is ...  

Because even though our customers have double-opted in, the mail filters
at their ISPs and on their local boxes will still catch and sort out our
email if it parses as spam, not ham.  This is particularly true for our
less technically sophisticated customers. Then, we have customers
calling or emailing us to complain that their sister/cousin/friend got
our offer, but not them ... and they are none to happy about it. 

We are on the flip side of the spam problem ... legitimate, responsible
email marketers who work very hard to get our message into the inboxes
of folks who not only want it, but demand it.  As a result we have to
stay abreast of spam trends to make sure our ham is not seen as spam.
