Spambayes has to be one of the simplest anti-spam packages to use, particularly if you use Outlook. All you have to do is train it for a few weeks by clicking Spam or Not Spam. Not really hard is it.
As for manually deleting things; from my experience you probably had your email package running when you tried to remove spambayes.
