Barb,
In theory SpamBayes should work with Incredimail as long as you use POP3 to
communicate with your mail server, though I'm not sure anyone's ever tried
it. (Check your Incredimail configuration to see if it uses POP3 or IMAP to
fetch mail.)
There is a table of options on the SpamBayes front page
(http://www.spambayes.org/). I created a link to the source distribution,
but you might try the 1.1a4 test release installer for Outlook. I believe
when you run the binary installer it should either automatically detect that
you aren't using Outlook (and install the POP3 proxy) or ask you whether you
want to install the Outlook plugin or the POP3 proxy. If prompted, choose
the POP3 proxy.
An alternative might be to switch to Thunderbird
(http://www.mozilla.com/en-US/thunderbird/) and then install the
ThunderBayes extension (http://pieces.openpolitics.com/thunderbayes/). That
is also a free email solution but should be easier to get setup.
