Take a look at Tyco's residential design guide, page 7 & 9. Page 9 shows the distance the sidewall sprinkler needs to be away from the peak as to minimize the obstruction caused by the slope. So, to answer your question I would say no to a single sprinkler at the peak, but there are other options.
