I believe your conclusions regarding the commodity are spot on, with one other item to note that the plastics were "unexpanded", and "exposed."  After that it would depend on which edition of the standard is applicable in your area.

From what you've described the criteria from the 2016 edition is likely shown in Figure 17.2.1.4(k), it would be 0.80 gpm over 1500 ft², with one level of closely spaced in rack sprinklers.  That is based on using CMDA sprinklers.  If you were to select CMSA sprinklers table 17.2.2.1 would appear to give the correct criteria.  If your choice was ESFR's then Table 17.2.3.1 would apply.

It would likely be covered in chapter 21 of the '19 edition, §21.5 for CMDA, §22.5 for CMSA, and §23.6 for ESFR's.

I would echo the thoughts of Bruce Verhei.  I can't imagine that there hasn't been testing done by that entity for protection of their products.  To that end it would likely be shown in §24.3 if the '19.
