You can use your monitor to change the rate. Just be sure to edit the forex transactions for the day and repost.
The other way is to delete all the forex transactions for the day. This will also delete the exchangerate. If you always work with foreign currency transactions look into automating the process and get the rates from a bank on a daily basies.
