Well,

If your sysadmin is worth his salt (MCDBA) there will be at least 5 days 
backup for a given week all of which should be backed up offsite as both 
hard copy (CD/Tape) or online - using something like Iron Mountain.

Of course, if you can access the SQL machine from your local machine (I 
do hope its only by VPN!!)  then just take your own backup of the .BAK 
file, though this could have impact on bandwidth depening on your DB size.

It is not good practive to use Enterprise Manager to connect to a 
Production DB - you shoudl certainly not connect to a table via EM in 
production.
