I wrote a (long) blog post on this for Leopard. I haven't had the chance to try it out on Snow Leopard.

If anyone can tell me how to create virtual machines of Snow Leopard, I'd be happy to try and set it up again and document it. (the fact that it might not work is what's stopping me upgrading)
