Wiki is great if you want to contribute some quick notes or do some drafting but as a comprehensive manual it has lots of weaknesses like lack of structure (you can fake it but eventually it's just a collection of pages with very little or no cohesion), versioning only per page, inability to convert content to different formats (single page html or pdf for off-line and printing for example) and no defined syntax.

So in my opinion it would be a better idea to take everything from the wiki, restructure it and put it into a book.
