Some flash chip drivers do a good job at write-levelling to enhance longevity of the flash chips, but usually at the expense of in-cpu processing time. JFFS2 and yaffs are designed with flash filesystems in mind, so they may be another avenue to consider, but definately, reducing the number of writes to the filesystem in the first place is also something that will help those filesystems do their job even better to help extend the lifetime of the hardware.
