So, 

You have three SBTouch, one is connected to a DAC, are you using EDO ?

Installing EDO may, or may not, have any effect.

LMS is on a Synology Nas

SBTouch is connected to the network via wireless

Are the SBTouch situated in different locations or do you swap them in
and out of the same location ?

The problem could be a network problem:- suggested solution, use
Ethernet if possible

It could be a software problem (LMS on Synology):- suggested solution,
install LMS elsewhere and connect to nas for music files

It could be a hardware problem (SBTouch power supply beginning to
fail):- suggested solution, change power supply

Try only one solution at a time to see if resolves the problem

The next time it happens look in the Server log for any message, 
Settings >  Information > Logitech Media Server Log File

What sort of files are you playing when it happens ?

Does it happen if streaming internet radio.

It might be worthwhile changing the streaming method,   Settings >
Player > Audio > Streaming Method >
