Is there any existing information on the number of entries squid can
handle before you start running into problems. Am I right in assuming
this is mainly processor dependent?

The first would be best to use a dstdomain acl, the latter requires a
url_regex acl.  Just be ready to step in and remove the url_regex if it
causes performance issues.
