I use calamaris (http://cord.de/tools/squid/calamaris/calamaris-2.99.4.0.tar.gz) to check amount of bandwidth saved by squid. For a detailed report about users, pages accessed and how much time were spent I use sarg (http://sarg.sourceforge.net/sarg.php).
