Here is what I would do:

Configure Squid to listen on 3128 and privoxy to listen on 8080

Configure clients to connect to squid on eth0:3218
Configure squid to use eth0:8080 as a parent and specify never_direct
all

This will keep squid logging intact as privoxy will make it all look
like its coming from it as well as still letting you use something like
squidguard if you wish.
