Remember that with RH 7.3 the default IMAP server is run under xinetd
and is UW IMAP. Becuase xinetd is a super-server you need to look at
it's logs and so forth.  The IP in squirrelmail should be which ever one
your imap server is listening on: most likely all interfaces by default.

Good luck, and follow Jon's advice...start telnetting 143 everywhere. I
also suggest you download pine, and build it and install it for
debugging. It comes with a very useful program called mtest that is
invaluable for debugging IMAP setups. Good luck.
