starttls starts encrypted sessions in the beginning of ordinary imap connection. sniffer should connection to tcp 143 port, initial imap server response and any further data should look like line noise. ssl (imaps) encrypts entire connection. any data on connection to tcp 993 should look like line noise. IMAP servers usually indicate STARTTLS requirement by adding LOGIN=DISABLED in capability response.
