If you already found and disabled it, just include it as a hidden field,
although that could be hacked.  However, you already found the correct
file; just make sure that when a message is being sent that you set the
$send_to variable with your hard-coded value.  Alternatively, you can
use the compose_send hook to create a *real* plugin to do this for you.
 That would allow you to submit the plugin for publishing on the SM
website so others who need the same functionality could enjoy the fruits
of your hard work.  :)
