I'd place Dovecot on about the same level as courier (although it's perhaps a bit less mature). (I have no personal experience with a Dovecot installation.) Courier is great for smaller sites, it's very reliable and very easy to maintain, but it doesn't scale well due to its Maildir storage. For large sites, I believe cyrus is the only way to go.
