A stout Voodoo3 with 16 megs of VRAM seems to be one of the best. It's likely to be all you'd ever be able to use anyway, as any games wanting a better vid card would likely also want a faster processor.
They're cheap, too. A Voodoo5 would be another option, as would some of the Matrox Millenniums, AFAIK.
