I can't offer much info except what I have heard from others.  The 
debian linux distribution is available both for 68k Macs and ppc 
macs.  I have heard (can't remember where) that it will also run on a 
starmax.

Now the following may be regarded as spamming - if so I apologise but 
it could be useful for your linux development.

I run #macintosh on the irc network irc.oz.org - a number of people 
there are running debian on different macs.  You can get help there - 
but be cautious on first entering (politeness is highly valued - 
especially on irc where the norm is abuse), introduce yourself and 
you can ask for me - my nick there is "freedom" (I am also an irc 
operator - i.e. admin - for this irc network) and if I am around I 
can point you to some of the people who may be able to help you.  If 
I am not around at least mentioning my nick will get you a better 
than cool reception :)  One of the people there has a fetish for a 
particular 68k mac, is collecting them and is running debian quite 
successfully - right now delving into the world of php and mysql as 
well as running the web server with apache - all on the the 
particular brand of 68k mac.  The nick of this person is "danamania". 
In fact this person was recently featured on a low end mac web page.

My business partner is the unix/linux guru here and we run both 
redhat (mainly for Filemaker pro servers) and debian for all else as 
much as possible (internet gateways, web hosting, etc.).  Debian is 
the most preferred linux from what we have seen for sys admins.  So 
nothing but the best - and it is available for Mac should we assume 
anything less? ;)
