Ed Stewart provides some really good information about digital cameras. By contrast, I'll include my own minimal experience.

First, I use my camera for mostly web-based images. I do print out a few in letters and have made a few picture postcards, but mostly I don't use "photo-quality" images. You shouldn't have too much difficulty finding a camera that is Mac compatible. You can always look on the web sites for Nikon, Canon, Olympus, Sony, Kodak, to see what drivers and interfaces they have available for the Mac. USB is the most common interface for still cameras. Video cameras are better with Firewire.

That said, I got a Canon PowerShot A50 digital still camera some years back. The software that came with it for digital download and editing was a little goofy and only seemed to work for about six months. I don't know if it was my abuse or the software. Instead, I got a USB "card reader" which treats the card as an additional drive.

The Canon uses standard CompactFlash (CF) cards, which are really cheap these days. The last one I bought was 128 MB for about $70. Now you can get 512 MB for about $45. While cheap, I'm told that the CF cards are relatively slow compared to ... for instance, Sony's proprietary memory cards. Faster cards means less waiting between shots. Ed can confirm/deny this, but I had a friend with a 3+ Megapixel CoolPix that took nearly a minute to write the highest resolution picture. Of course, technologies change ... rapidly.

For most of my meager image editing, I use Graphic Converter rather than PhotoShop. I do use PhotoShop for heavy duty imag editing.
