Hi Simon,
 
you set the gradient implicitly through the Z coordinate of your road 
geometry. You can add edit the node positions in netedit inspection mode 
and add a third dimension.
Example:
    * you have a node with position 10.0,20.0
    * setting it to 10.0,20.0,5.0 raises the node by 5m
You can define your network using the Plain XML
<https://sumo.dlr.de/docs/Networks/PlainXML.html> format as well and 
provide 3D coordinates.

Hello  SUMO Community,
 I have a question regarding setting the gradient for a road in SUMO. Is it 
possible to set the gradient of a road either in Netedit or in the XML 
network file? I typically draw my Network using Netedit, and I'm curious if 
this feature is supported.

If it is possible, I would appreciate any guidance or information you can 
provide on how to achieve this.
