When you're making boot floppies, ensure that you have the correct System
Enabler in the System Folder of the disk. Often times you won't be able to
get any Power Macintosh to boot under 7.x without the appropriate enabler.
Since both the S900 and the J700 use the Storm Surge motherboard, based from
the PM 9500, I suggest using Google to locate the right System Enabler for a
Power Macintosh 9500 and using that one.

If you have the patience to wade through Apple's site, somewhere you should be able to locate a Disk Tools disk image. This is a bootable floppy image that contains a minimal system and a copy of the then current Disk First Aid. The System 7.5.3 *install* disk images are just that - I don't think that they will actually boot the system. Look for Disk Tools 8.5 or Disk Tools 8.1 disk images, as they are new enough to understand HFS+.
