Just received the rss announcement regarding the update from 2.5b1 to 2.5b2, but I'm a little confused over why the update.
http://www.seamonkey-project.org/releases/seamonkey2.5/changes states: Fixes in Beta 2 Insert/Characters and Symbols had stopped working (no options in drop-downs) (bug 690267). These dropdowns were/are working correctly in SeaMonkey 2.5b1 (as I reported in the "2.4.1 Insert Characters and Symbols" thread.
