Andi - You want to avoid simply changing the field labels - this will confuse you to no end if you try to export the data, create reports, etc. later on down the road.
I change the contact flag fields for groups all the time based on their program work. You should feel free to do so as well, although it is probably nor encouraged because it can cause calamity, if you're not careful. So, before you do anything, copy ebase to a zip disk or cd so you have a very recent, unblemished, copy. You will want to follow the part in the manual that describes creating new contact fields. This is the best approach to ensure data integrity and flexibility. It allows you to set multiple flags on a single person, while a drop down menu won't.
