The default gateway is the default route for traffic on that network segment to reach all remote network segments not otherwise specified in the routing table. So if you're trying to route traffic from your pfSense box out to the Internet, the default gateway will be the next hop on your WAN subnet's network (hint: this address is provided by your ISP). If, on the other hand, you're trying to handle routing for your LAN clients, the normal default gateway is going to be the LAN IP address of your pfSense box.
