right now, inivisibility is not fully supported on XMPP, so when you set your status to "invisible" you might be available on XMPP. (Note that this is a bug; when it's fixed you'll need to do what John Uhlmann suggested.)

Select 'New status...' from the drop-down status selector and choose 'Use a different status for some accounts'.
