With what protocol?
You can set any alias you want for your buddies and that will be displayed
but that's a manual process.
On protocols that use email addresses as usernames (or email-address-like
usernames) if the buddy hasn't set an alias then you will see the full
username.
There is a plugin which causes (MSN buddies at least) to display with
their email addresses instead of with their Friendly Names (though I don't
recall which plugin that is at the moment).
