Maple Syrup is a special and unique product- the Finger Lakes is one of few
places on earth where we can harvest and boil tree sap into a delicious
food.

Sapsquatch is a community venture working to develop a sustainable sugaring
enterprise in Tompkins County. We are two permaculture designers who love
the feeling of the crisp air as Winter changes to Spring and nature offers
the ultimate gift: sugar!

Support us today with your CSS (Community Supported Sugaring) share. It
works just like a CSA: you purchase a share before the season to support our
production costs and we guarantee you a piece of the local harvest.

Orders are now being taken and we have limited quantity. Your order will be
filled in the order received beginning this March as we collect, boil, and
bottle syrup from over 300 trees. We welcome you to visit our sugarbush,
volunteer your time, or attend one of our events.

*PROGRAMS & EVENTS*

VOLUNTEERING is a blast! Please email [email protected] if you are
interested in helping out. We need folks to assist in the following:

- sugarshack construction
- wood cutting, gathering, stacking, and splitting
- laying the lines for tapping (mid to late Feb)
- collection of sap and boiling

APPRENTICESHIP
We are excited to offer this program including instruction in permaculture
and sugarbush management through hands-on, experiential learning. Skills
learnt include:

 - GPS mapping and data collection
-  Permaculture fundamentals and design process
- Chainsaw safety and use
- Sugarbush management including laying lines, boiling, and finishing sap
-  Teaching children about sugaring

Apprenticeship applications are due FEBRUARY 13th. Please email

Tuition: $200 fee includes materials and instruction.

SUGARBUSH TOURS
Tours of the sugarbush including the history, lore, and process of sugaring
will be offered EVERY SATURDAY at 1:00 pm from February 28 thru April 4th.
Learn about the progression of sugaring from the time of the Native
Americans to present. Try your hand at tapping. Taste sap and syrup.
Donations accepted.

SUGAR MOON BENEFIT PARTY 3.13.09
Join us for stories, music, food, and fun as we gather 'round the old boiler
and welcome this years sugar moon. Donate and support your local sugaring
folk. Enjoy sledding, hiking, and a moonlight sugarbush tour. Donations
accepted.

NYS MAPLE WEEKEND 4.28 & 4.29
In cooperation with the NYS Maple Producers Association, visit the
Sapsquatch sugarbush and enjoy a pancake breakfast, live music, tours, and
more! Check back for updates as we confirm events for the weekend.
